Cheese Cupcakes

I am finally sharing one of my most precious recipes I have improved over the years. This has got to be one of my top 5 favorite cupcakes to make and to eat! In this recipe I used two different kinds of cheese. One is the quick melt type of cheese, here in our country we have Magnolia Quickmelt Cheese, but I freeze it before grating it. The other one is regular cheddar cheese.

Ingredients:

1 and 3/4 cup flour (sifted)

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup butter (softened)

1/2 cup granulated white sugar

2 medium sized eggs

1 can sweetened condensed milk (14 ounces)

1/2 cup quick melt cheese, shredded

1/2 cup cheddar cheese, shredded

Preheat the oven to 350 deg F .In one bowl mix all the dry ingredients. In a separate bowl, cream butter, sugar and eggs together. You can now add half of the dry ingredients to the wet ingredients and then add half of the condensed milk. Then add again the remaining half of the dry ingredients, then the condensed milk. Mix well. Then you can now add all of your quick melt cheese and half of the cheddar cheese. Fill up your cupcake cups 3/4 full and top it with your remaining cheddar cheese. Bake for about 20-22 min. Use the toothpick method to check if it is fully cooked. Allow to cool.

It is better to eat it with fresh cold milk.
